Guatemalan Bean Soup
Ingredients

2 tablespoons of Oil
3 Cloves of garlic peeled and chopped
1 Finely chopped onion
1 Finely chopped red pepper
2 Large tomatoes chopped into cubes
2 teaspoons of Ground cumin
1 pinch of Salt
4 cups of Chicken broth
2 ½ cups of Cooked black beans
4 Finely chopped green onion stalks
½ cup of Chopped fresh cilantro
Grated white cheese
Tortilla chips
1 pinch of Pepper
Preparation
Step 1 : Heat the oil in a pot and bring to medium heat, sautéing the garlic and onion for 2 minutes.
Step 2 : Next, add the pepper, tomatoes, green onion, cumin, season with salt and pepper, and sauté everything for 5 minutes on low heat.
Step 3 : When the sauté is ready, add the beans, cilantro, and chicken broth, and let it boil for 15 minutes covered, stirring occasionally.
Step 4 : Remove from heat and let it rest for 10 minutes.
Step 5 : Blend the soup slowly until reaching a smooth mixture without lumps.
Step 6 : Pour it back into the pot and let it simmer.
Step 7 : Taste and adjust seasoning if necessary, then remove from heat and let it rest for 5 minutes.
Step 8 : This delicious soup can be served with broken tortilla chips and you can grate some white cheese on top.
