Ingredients

2 tablespoons of Oil

3 Garlic cloves, peeled and chopped

1 Finely chopped onion

1 Finely chopped red bell pepper

2 Large tomatoes, diced

2 teaspoons of Ground cumin

1 pinch of Salt

4 cups of Chicken broth

2 ½ cups of Cooked black beans

4 Finely chopped green onion stalks

½ cup of Freshly chopped cilantro

Grated white cheese

Tortilla chips

1 pinch of Pepper

Preparation

Step 1 : Heat oil in a pot over medium heat, sauté garlic and onion for 2 minutes.

Step 2 : Add bell pepper, tomatoes, green onion, cumin, season with salt and pepper, and sauté everything for 5 minutes over low heat.

Step 3 : Once the sofrito is ready, add beans, cilantro, and chicken broth, and let it boil for 15 minutes covered, stirring occasionally.

Step 4 : Remove from heat and let it sit for 10 minutes.

Step 5 : Slowly blend the soup until smooth and lump-free.

Step 6 : Pour it back into the pot and let it simmer over low heat.

Step 7 : Adjust seasoning if necessary and remove from heat, allowing it to rest for 5 minutes.

Step 8 : You can serve this delicious soup with broken tortilla chips and sprinkle grated white cheese on top.
