Ingredients
2 pounds of Espinazo
5 Tomates
½ pound of Miltomate
3 Cebollas
2 Dientes de ajo
Aceite
Masa de maiz
1 Hoja de apazote
1 pinch of Sal
1 Chile guaque
Preparation
Step 1 : To prepare this recipe, start by cutting the Espinazo into medium pieces and washing it well.
Step 2 : Then, boil it in a pot with water, salt, chopped onion, and garlic.
Step 3 : On the other hand, roast the tomatoes, miltomate, and whole onions on a griddle or skillet.
Step 4 : Blend them with a little hot water to make a puree.
Step 5 : Next, fry the sauce in hot oil until thickened.
Step 6 : Add the cooked Espinazo and let it simmer for a few minutes.
Step 7 : Separately, prepare the masa de maiz with a little water and salt.
Step 8 : Shape into small balls and make thin tortillas.
Step 9 : Finally, add the tortillas to the Espinazo broth along with a fresh apazote leaf and a chile guaque.
