Ingredients

2 liters of Water

4 Carrots chopped into pieces

2 Peeled potatoes in cubes

½ pound of Diced tomatoes

1 Chopped onions

2 Crushed garlic cloves

Celery leaves

2 Split guisquil (chayote)

1 A bunch of mint

1 pinch of Salt

Preparation

Step 1 : To start, bring water to a boil with a pinch of salt.

Step 2 : Then, add the tomatoes, onion, celery leaves, and garlic, cooking for about 15 minutes.

Step 3 : Next, strain the vegetables and return the broth to the heat along with the vegetables.

Step 4 : Add the guisquil, carrots, and potatoes, cooking until they are tender.

Step 5 : Then, add the mint and season with another pinch of salt, cooking for approximately 5 more minutes.

Step 6 : Finally, serve the hot broth in a deep plate and add avocado if desired.
